Este recetario de cocina es un esfuerzo por incorporar en la historia de la cultura fronteriza, un legado importante de nuestros antepasados, quienes durante el período de florecimiento de la sociedad norteamericana principalmente en los años veinte, pretendieron incorporarse, sobre todo las clases medias educadas, al estilo de vida de una sociedad que cada día imponía sus valores prestigiosos como modelos dominantes. La selección de recetas que gustosamente compartimos, reflejan en gran medida una alteración en la dieta tradicional de las comunidades mexicoamericanas y latinas, que durante esos años habitaban los estados de Arizona y California. Al enriquecerse la dieta tradicional con la influencia de la cocina internacional, surgió una cocina híbrida que le dará una nueva identidad a la cultura gastronómica de la región. Es importante señalar sin embargo, que la identidad de la cocina de nuestras comunidades a través de los años, es producto de una gran variedad de influencias, mismas que han enriquecido nuestra cultura gastronómica y mantienen con dignidad los elementos esenciales de una vieja tradición europea, mestiza y de los grupos originarios que habitaron estas zonas de América. SOBRE LOS AUTORES: ARMANDO MIGUÉLEZ MARTÍNEZ es educador e investigador de la cultura y literatura hispanounidenses. Es coautor de "Literatura de la Revolución Mexicana en el Exilio: Fuentes para su estudio", con Oscar Somoza, así como de "Jauja: Método integral de español para bilingües", con María Sandoval. También publicó Antología histórica del cuento literario chicano 1877-1950. Ha rescatado una gran cantidad de información sobre la producción literaria y periodística en publicaciones escritas en español en el suroeste norteamericano. FERNANDO TAPIA GRIJALVA es profesor investigador de tiempo completo en el Departamento de Psicología y Ciencias de la Comunicación en la Universidad de Sonora. Ha publicado el libro "Sonetos y Sonatas de Miguel Bolaños Cacho" y varios artículos en revistas internacionales sobre el tema del exilio y la cultura chicana. Actualmente dirige el proyecto de investigación, Dominación y subordinación en los esquemas de comunicación en la frontera Sonora-Arizona. DANIEL GARCÍA VALENZUELA es gestor cultural y cursa la Maestría en Desarrollo Regional del Centro de Investigación en Alimentación y Desarrollo, A. C. Colabora como coordinador operativo del Consejo Cultural Ciudadano de Sonora. Recientemente editó el libro "Julio G. Arce: Escritor y periodista del segundo exilio mexicano del siglo XX en territorio aztlanense" para los autores principales de esta obra.
