INTRODUZIONE


L'affumicatura è una tecnica per cuocere la carne e altri alimenti su un fuoco aperto. I trucioli di legno vengono aggiunti al fuoco per conferire al cibo un sapore affumicato. Il fumo è distinto dall'essiccazione. Il fumo aggiunge sapore a carne, pesce e pollame e ha anche un minore effetto di conservazione degli alimenti. Prosciutti, arrosti di maiale, pancetta, petto di manzo, pollame intero, salmone, aringhe e ostriche sono spesso affumicati.

L'affumicatura a caldo è un metodo per cuocere e affumicare la carne allo stesso tempo. In un affumicatore, la temperatura dell'aria viene aumentata e controllata attentamente per aumentare la temperatura della carne, ottenendo un prodotto alimentare completamente cotto. Carne, pollame e pesce vengono spesso messi in salamoia in una soluzione di acqua salata per favorire la ritenzione di umidità durante il processo di affumicatura.

Un fumatore viene utilizzato per affumicare a casa carne, pollame e pesce. Un fumatore è un fornello da esterno appositamente progettato per questo

scopo. Può anche essere fatto in un barbecue all'aperto coperto con una leccarda d'acqua posta sotto la carne. Per fare il fumo, i trucioli di legno vengono posti direttamente sul carbone ardente.

Un altro modo per aggiungere sapore di fumo a pesce e carne è usare il fumo liquido. Il fumo liquido ha due vantaggi distinti. Il primo vantaggio è che la quantità di aroma di fumo può essere completamente controllata. Il secondo vantaggio è che il sapore del fumo è immediatamente evidente.

Poiché l'affumicatura a caldo è essenzialmente una tecnica di cottura modificata, la manipolazione sicura di carne, pollame e pesce è la principale preoccupazione per la sicurezza alimentare.
