About the Book

Hvis du ønsker å blande sammen proteinkildene dine med plantebaserte kraftsentre, trenger du ikke lete lenger enn Tofu som et lettlaget vegansk eller vegetarisk alternativ. Tofu er fleksibel, matlagingsmessig. Dette er fordi det kommer i en rekke teksturer (avhengig av hvor mye vann som presses ut) og er ganske tørt. Fordi det er relativt smakløst, tar det andre smaker godt uten å konkurrere med dem.


Tofu, også kjent som bønnemasse, er en matvare tilberedt ved å koagulere soyamelk og deretter presse den resulterende ostemassen til solide hvite blokker med varierende mykhet; den kan være silkeaktig, myk, fast, ekstra fast eller superfast. Utover disse brede kategoriene, er det mange varianter av tofu. Den har en subtil smak, så den kan brukes i salte og søte retter. Den er ofte krydret eller marinert for å passe til retten og dens smaker, og på grunn av dens svampete tekstur absorberer den smaker godt.


Hvis du aldri har jobbet med det før, kan det være skremmende å lage tofu. Men når du først har lært litt om det, kan det ikke være lettere å tilberede tofu godt! Nedenfor finner du de deiligste og enkleste oppskriftene du kan lage mat som en proff!

Enkle tips for matlaging av tofu:


 Pass på at du velger riktig tekstur. I dagligvarebutikker varierer det fra silke til fast og ekstra fast. Myk silketofu ville være mitt valg for å blande inn i desserter eller skjære i misosuppe, men hvis du serverer den som hovedrett eller topper den på boller, er ekstra fast det du trenger. Den har en sterkere, tettere tekstur og mindre vanninnhold enn andre typer tofu. Merk: Jeg foretrekker å kjøpe økologisk tofu laget uten genmodifiserte soyabønner.

 Press den. Tofu inneholder mye vann, og du vil presse det meste ut, spesielt hvis du baker, griller eller steker det. Tofupresser er tilgjengelig i butikkene, men det er ikke nødvendig å ha en. Du kan bruke en stabel med bøker, eller bare gjøre det jeg gjør, og bruke hendene til å trykke den lett i et kjøkkenhåndkle eller tørkepapir. (Bare pass på at du ikke presser for hardt, ellers smuldrer det opp!)

 Krydder. Den. Opp. Det er en grunn til at tofu blir flak for å være blid, og det er fordi det er det! Pass på å krydre den godt. Du kan marinere den, eller tilberede den med en sprøbakt tofuoppskrift.
